“Sweet Potato Hash Browns

Incredibly simple, these hash browns are made just of onions, peppers, and coarsely grated sweet potatoes. You could use fresh garlic instead of garlic powder, but its flavor feels distinctly diner-y to me and hits just the right note for these hash browns. Serve alongside the Kitchen Sink Frittata, or enjoy them with the Walnut “Sausage” Patties for a completely vegan breakfast. I also love them in a grain bowl with some rice, cooked greens, thinly sliced cucumber, and a drizzle of Go-to Dressing. Or, as my friend Steph suggested when she tested this recipe for me, use the hash browns as a taco filling.
Serves 4

3 tablespoons extra-virgin olive oil
1 small yellow onion, finely diced
1 small green or red bell pepper, stemmed, seeded, and finely diced
1 pound [453 g] sweet potatoes, coarsely grated (about 1 very large or 2 medium sweet potatoes and there’s no need to peel, just give them a good scrub)
1 teaspoon garlic powder
1 teaspoon kosher salt

Serves 4

3 tablespoons extra-virgin olive oil, plus 2 extra tablespoons for cooking the patties
1 small yellow onion, roughly chopped
1 large portobello mushroom, stem discarded, roughly chopped
1 cup [130 g] walnut halves
2 tablespoons minced fresh sage
½ teaspoon pimentón (smoked Spanish paprika)
A few dashes of your favorite hot sauce
1 teaspoon kosher salt, plus a little extra for sprinkling on top
½ cup [60 g] rolled oats”

Place the 3 tablespoons of olive oil in a large nonstick skillet over medium heat and add the onion, portobello, walnuts, sage, pimentón, hot sauce, and salt. Transfer the contents of the skillet to a food processor and then wipe out the skillet.
Add the oats and maple syrup to the food processor and pulse the mixture until everything is finely chopped and well-combined. Be careful not to overprocess the mixture. You want it to be the texture of ground meat, not a smooth pâté. Season the mixture to taste with salt. Cover and refrigerate for at least 1 hour (and up to 3 days) to chill it before proceeding (this will help it hold together better).
Divide the mixture into 8 equal portions and form each into a small patty (wetting your hands makes this a little less messy).
Place the remaining 2 tablespoons of oil in the wiped-out skillet and return it to medium heat. Cook the patties, flipping them once, until nicely browned on both sides, about 2 minutes per side[…]”

the 5 basic "LIKE-food" groups. I covered this with you many years ago!

Fruit-like foods: Strawberry Poptarts, VeryBerry cereal
Vegetable-like foods: Durkee onion rings (on trash bean
casserole), potato chips, popcorn
Dairy-like Foods: Spray cheez in a can, cheez whiz, tastykakes (have>milk in them), and of course- real eggs go here
Grain-like foods: Wheat Thins, McCormick Salad Toppins'
Meat-like foods: hotdogs, scrapple, Vienna sausages, frozen Mexican

Aldis is always short of stuff because they have massive sales and you have to watch their ads to get in before the sale before sold out

Sometimes customers in line will tell you unsolicited what is on sale

but for the most part they were well stocked with vegetables which is what i went to get this week

I had a full bag of things like mushrooms, greens cucumbers carrots etc for a 14 dollar haul
